11 in 2001.... Day 4: Best Leftover Recipe!


Hands down, my current favorite recipe that gives you lots of leftovers is Slow Cooker Chicken Taco Soup from Allrecipes.com! Yum! And, there's no better recipe than the kind that combines lots of yummy ingredients in quick and delicious way!

I first blogged about it a few months ago, but here it is again!

You need...
a couple boneless, skinless chicken breasts (uncooked)
a pack of taco seasoning
a can of tomato sauce
a can of Rotel
a can of black beans
a can of chili beans
a can or bottle of beer (I know it seems weird, but it gives it that malty taste.)

Just mix all your ingredients (except the chicken breasts) in your slow cooker. Place your chicken breasts on top of the soup. Cook on low for five hours. Then, pull out the chicken, shred it, put in back in, and stir. Cook for an additional two hours.

Then, just top it with whatever you like... shredded cheese, sour cream, chives, salsa, tortilla chips, etc.

So delicious! Sam and I usually cook this on Sunday and then enjoy the leftovers Monday and Tuesday!
