Spaghetti and Meatballs!

Last night I was planning to fix basic spaghetti (Newman's Own sauce + noodles). It wasn't thrilling me, so I decided I'd try my hand at making homemade meatballs! They actually turned out pretty darn good! I adapted a Pioneer Woman's recipe and used fewer ingredients. After all, if you're going to have to buy so many ingredients at the grocery store just to make dinner, isn't it just easier to go out to eat? :)

So, here's my own adapted meatball recipe....

1 lb ground beef
a little salt
a little pepper
a splash of milk
3/4 cup Parmesan cheese
3/4 cup Italian bread crumbs (A friend of mine likes to use French bread crumbs soaked in milk)
2 eggs
pork sausage (I didn't use it this time, but might in the future)

Just use your hands to blend all the ingredients. Make 25 or so meatballs, and put them on a cookie sheet. Put them in the freezer for about ten minutes so that they won't be as likely to fall apart when you do the next step. Now would be a good time to start boiling your noodles and warming your sauce (If you're fancy, I am sure there are lots of great sauce recipes. But, I stuck with my Newman's.) Back to the meatballs: Put some olive oil in a skillet, and get it hot. Put in 8-10 meatballs at a time, and brown them. Drain on a plate with a paper towel. Mix all your ingredients, add some paremesan cheese, have a little French bread (with butter and Parmesan cheese) on the side. Yum!
