Souper Sundays

Lately I have been in a cozy food kind of mood. Cozy food (in my mind, anyway) means soup or chili with grilled cheese sandwiches.

Two Sundays ago, I made this chili...
But, I added a pound of cooked ground beef, along with tomato paste. It was delicious! I also picked up a pack of Bear Creek Cheddar Potato Soup. I'll probably try it soon!



This past Sunday, I made this recipe...

Slow Cooker Chicken Taco Soup

You need:
one can of beer
one can of chili beans
one chopped onion (if desired)
one can of tomato sauce
one pack of taco seasoning
one can of Rotel
one can of black beans
one can of whole kernel corn, drained
three boneless, skinless chicken breasts thawed
shredded cheddar cheese, sour cream, tortilla chips (if desired)

1. Put first eight ingredients in slow cooker. Stir. Place chicken breast on top of mixture, just barely covering them in liquid. Cook on low for five hours. Pull out chicken breasts, shred the chicken. Stir the chicken back in the soup again. Continue to cook on low for two more hours.
2. Top with shredded cheddar cheese, sour cream, and tortilla chips as desired.

Since Sam and I are a little family of two, this recipe has lasted us three days!
