The Easiest Grilled Chicken Ever (and Asparagus, Too!)

My friend, Jennifer, gave me this idea. This chicken is so very easy and delicious!

Grilled BBQ Chicken
boneless skinless chicken breasts
Rendezvous BBQ Rub Seasoning

1. Thaw your chicken. (I like to thaw more than what we'll eat for that particular meal and use leftovers for fantastic grilled chicken salad the next day!)
2. Generously season your chicken with the rub.
3. Grill.

YUM!
Like I said, this is awesome for dinner with pan-cooked asparagus and a baked sweet potato.
It's so good, too, the next day if you use the chicken (chopped) as a topping for a spring mix salad with a little low fat honey mustard dressing.

And, while I'm at it....

Super Easy, Delicious Asparagus:
fresh asparagus
parmesan cheese
salt
pepper
lemon pepper
olive oil
butter (optional)

1. Use a saute pan. Put in just enough olive oil to coat the bottom. Put in about a teaspoon of butter if you want. Warm your pan on medium low heat and melt/stir in your butter if you put some in.
2. Sprinkle in salt, pepper, and lemon pepper. About a teaspoon of each seems about right.
3. Rinse the asparagus. Break off the bottom of each stalk.
4. Put in your asparagus. Cook on medium high heat, turning your asparagus regularly, until it becomes flimsy and darker green/barely brownish.
5. Top with parmesan cheese.
